Step by Step Instructions:

To get this Strawberry Lemonade Fruit Leather going, then you’ll need the following: Coconut Water, Organic Maple Syrup, 2 cups of Strawberries & 1 cup Pineapple (I used frozen and then mostly thawed them in the microwave), 1 Lemon, Sea Salt, Cinnamon, Cardamom, & Ground Ginger.

Start off this Strawberry Lemonade Fruit Leather by adding 6 ounces of coconut water to a blender. Then place a a strainer over the top.

Juice the lemon into the blender letting the strainer catch any pulp and seeds.

Now preheat the oven to 200 degrees. Add the fruit mixture to a nonstick skillet and heat it over medium heat. Bring the mixture to a light boil, and then stir constantly for 15-20 minutes until it reduces and thickens.

You’ll see the mixture is now a dark red, has reduced, and has thickened enough that it will be spreadable.

Line a baking sheet with a Silpat, and then carefully pour the fruit mixture onto the Silpat. I used an offset spatula to try to get it in an even layer. But so long as it’s close, you’ll be okay. Bake the Strawberry Lemonade Fruit Leather for 3 hours, and then start checking it regularly.

Healthy snacking that makes you feel like a kid again!

Ingredients

Fruit Leather Ingredients:

  • 6 oz. Coconut Water
  • 2 T. Maple Syrup
  • Juice of 1 Lemon
  • 2 cups of Strawberries, thawed if using frozen
  • 1 cup of Pineapples, thawed if using frozen
  • Pinch of Sea Salt
  • 1 t. ground Ginger
  • 1 t. ground Cinnamon
  • 1/2 t. Cardamom

Instructions

  1. Add all ingredients to a high powered blender, and then blend until fully smooth.

     

  2. Now preheat the oven to 200 degrees. Pour the fruit mixture into a saucepan and then bring to a light boil. Stir the mixture constantly for 15-20 minutes, so that the mixture reduces and thickens.

     

  3. Line a baking sheet with a Silpat, and then pour the mixture onto the sheet. Use a spatula to smooth it into as even of a layer as you can, so that it bakes evenly.

     

  4. Bake for 3-4 hours, and start checking at 3 hours to ensure it’s baked completely and still slightly tacky when you touch it. Make sure it’s baked all the way through though, your you’ll have some really soft spots (that will still taste great).

     

  5. Let the fruit leather cool completely, and then gently peel it from the Silpat. Use a sheet of waxed paper to help ease it off of the silicon mat. Cut into about 2” strips and then enjoy immediately or stir in an airtight container.
